KOFTE

Kofte have a huge place in Turkish cuisine, that they have dozens of variations. This recipe is the basic meatball that is commonly made in every Turkish household.

 

The key to have a delicious kofte is using enough spices with the right ratios.

Ingredients:​

  • Lamb mince (around 500g)

  • One teaspoon of cumin

  • A handful of chopped parsley

  • A handful of chopped mint

  • Two garlic cloves crushed

  • Salt and pepper to season

​Method:

Mix all the ingredients together in a bowl and then roll into long oval balls. Thread onto wooden or metal skewers and brush with oil. Cook on a hot griddle pan for 3-4 mins each side.

Serve with tabbouleh, flatbread and yoghurt with mint stirred through it.
